Olive Oil Mashed Potatoes

Simple, creamy Olive Oil Mashed Potatoes? Yes, please! This recipe is a simple start to delicious mashed potatoes using our earthy Il Fusti Estate Olive Oil. This recipe can also be jazzed up with extra butter or cream for those who aren't counting calories. Absolutely delicious.


  • 2 lbs Yukon Gold or German Butterball potatoes, peeled and cut into 1-inch chunks
  • 8 garlic cloves, peeled
  • 2 tbsp Salt
  • 1/4 cup Il Fusti Estate Olive Oil


Step 1: Bring water to a boil in a large saucepan. Add potatoes, garlic and 2 teaspoons salt and cook for about 15 minutes until potatoes are tender.

Step 2: Drain potatoes and garlic, reserving 1 cup of cooking liquid. Mash potatoes and garlic. Beat in olive oil and then thin to desired consistency with reserved cooking liquid. Add additional seasoning if necessary.
