Olive Oil Blackberry Muffins

These tart blackberry and olive oil muffins were so tasty! Thanks to our Estate Extra Virgin Olive Oil in the batter, the muffin turns out incredibly moist throughout. We loved our with butter and a cup of coffee. So good! Check out the recipe below: 

Ingredients:

• 1 cup milk
• 1 egg
• 3 Tbsp Estate Extra Virgin Olive Oil 
• 1 cup all-purpose flour
• 1/4 cup white sugar
• 1 tsp baking powder
• 1/2 cup blackberries

Directions:

1. Preheat oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
2. Mix milk, egg, and olive oil together in a bowl. Add flour, sugar, and baking powder; mix well. Fold blackberries into the batter.
3. Spoon batter into the muffin tin, filling each cup 1/2 way.
4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 20 minutes.
