Bright, smoky, and unexpectedly smooth, this Lemon Olive Oil Margarita is our favorite twist on the classic. The secret? A splash of Il Fusti Lemon Olive Oil. It adds a soft citrus richness that balances the boldness of mezcal, lime, and agave. Finished with a smoky rosemary sprig, it's summer in a glass!
1 sprig rosemary mashed (optional)
2 oz of Mezcal or Tequila of choice
1/2 oz Cointreau
25 oz Il Fusti Lemon Olive Oil
1 half-fresh lime
1/2 oz agave syrup
Garnish: smoky rosemary sprig, lime
Rim: lime- salt, orange zest, lime zest
Prep the rim of the chilled glass with lime
Dip glass into mixture of salt, orange zest, and lemon zest
Mash rosemary into mixing cup (optional)
Add 2oz of Mezcal/Tequila and Cointreau to mixing cup
Add the juice of half of a lime
Add .25 oz (½ tablespoon) of Il Fusti Lemon Olive Oil
Add ½ oz of agave syrup
Add a handful of ice
Shake and pour
Garnish with lime and smoky rosemary spring
