Grilled Olives

Want to try something new this summer? Ditch the olive jar and get ready to taste olives in an entirely new way! Let's grill em'!

This recipe brings such unexpected joy to olive lovers bringing out a different dimension in the olive’s flavor and texture  all with little effort. Not only it is a fun presentation, but you will be surprised to see that they get wonderfully buttery in a matter of seconds on the grill.

Impress your guests with an unexpected appetizer, either warm or cold. This recipe can be made in advance and refrigerated until you are ready to serve.


  • 2 cups of mixed olives, stuffed and pitted olives
  • 2 Tbsp Il Fusti Estate Olive Oil or Il Fusti Garlic Oil
  • 1 Tbsp fresh minced Rosemary
  • 1 Tbsp fresh minced Thyme
  • 2 cloves of garlic
  • 1 tsp black pepper
  • 2 tsp sea salt
  • 2 tsp fresh lemon zest, optional
  • 1 Tbsp fresh parsley chopped, optional


  1. In a large bowl, mix all ingredients together, coating the olives well.
  2. With a slotted spoon, place them into a grilling basket or aluminum foil shaped into a pouch.
  3. Grill over medium high heat for 6 to 8 minutes or when the olives get slight grill marks (slightly charred) and soften.


Remove from grill and toss with remaining olive oil, herb mixture and serve warm with toothpicks. If made in advance, serve straight from the refrigerator. Recipe adapted from Tassos.
