By far one of our favorites so far, this Asian Cabbage Salad with Peanut Butter Dressing is a knock-out! Sweet, tangy, crunchy, fresh and healthy! We used our Honey-Ginger Vinegar and our Estate Extra Virgin Olive Oil to make a yummy Peanut Butter Dressing which we then dressed the salad to perfection. This side dish would be the talk of any picnic and we cannot wait to hear what others think. Share your input with us if you give it a try!
Peanut Butter Dressing:
In a large bowl combine ⅓ cup peanut butter, 1 teaspoon curry powder, and ½ teaspoon each salt, garlic powder and ground ginger; whisk in ⅓ cup water, 2 tablespoons Honey-Ginger Vinegar and 2 tablespoons Estate Extra Virgin Olive Oil until smooth.
Prepare Peanut Butter Dressing
Toss shredded cabbage, peas, jicama, and green onions with dressing. Cover and chill for 30 to 60 minutes.
Just before serving, sprinkle with toasted almonds. Makes 6 to 8 servings.
