Airfryer Olive Oil Sweet Potatoes



It tastes so good! Who would have thought that an AirFryer Olive Oil Sweet Potatoes is all you need for a quick, filling lunch? Add our  Il Fusti Harvest Estate Olive Oil for the added spice and savor to balance the rich, buttery texture. We are excited to have another serving this dinner!



Ingredients

Two 8-ounce sweet potatoes, scrubbed

2 teaspoons Il Fusti Harvest Estate Olive Oil

Kosher salt and freshly ground black pepper

Unsalted butter, for serving

Chopped fresh chives, for serving



Instructions

  1. Toss the sweet potatoes with the Il Fusti Harvest Estate Olive Oil, 1/2 teaspoon salt and a few grinds of pepper in a medium bowl until evenly coated.
  2. Place the potatoes in the basket of a 6-quart air fryer. Cook at 400 degrees F until crispy on the outside and tender on the inside, flipping halfway through, 35 to 40 minutes.
  3. Cut lengthwise along the top of each potato, being careful of the hot steam, then fluff the inside with a fork and season with a pinch of salt. Top with a pat of butter and chopped fresh chives.
